Chitosan is made by removing part of the acetyl group from chitin , and chitin has many different sources , usually found in the shells of marine arthropods such as shrimps and crabs , the shells of insects , the cell membranes of fungi and algae , mollusks Shells and skeletons and cell walls of higher plants. Currently most of the common products in the world come from shrimp & crab shells , and the output is relatively large; however , with the improvement of human living standards , and the reasons that most European and American customers are allergic to shrimp , crab and other marine products , we have developed fungal source of chitosan , and scaled up production. At present , this series of products are divided into Mushroom source and Aspergillus niger source. Mushroom-based are further divided into those derived from Shiitake mushrooms(Lentinus edodes) and those derived from Agaricus bisporus
